So I am currently very hungry while I am writing this and it reminded me of a new food obsession I have..and get this it is pretty healthy! Here it is...roasted sweet potatoes!
All you have to do is cut the sweet potatoes into cubes I would say about three quarters of an inch or so, spread them on a baking sheet, drizzle olive oil on them, then toss it so the oil is on all the veggies(you can actually do all sorts of veggies like carrots, onions, squash it is all so good. But so far out of the veggies I have tried I like sweet potatoes the best). Then put some salt and pepper on it and throw it in the oven on 450 degrees for thirty minutes! OH SO GOOD! And if you want you can sprinkle some brown sugar on top too.
I am trying to be better at cooking..not only making food taste good, but actually cooking! In an effort to become better I have been watching the food network while I nurse..or have a minute in the day. I have decided I actually like it a lot! It inspires me to cook. Okay, not EVERY day but it is a huge improvement on cereal. So if anyone has any good recipes please share!
Oh I thought of another delicious recipe.
So you just put a big jar of salsa in the crock pot ( I just used the Kroger brand)
Then add one package of cream cheese (which I cut in cubes so it melted faster).
Then one ranch packet. Stir together and then add chicken. (I used tenderloins).
Cook for about one hour on high. Then I let it cook for another six hours or so on low or just until the chicken is fully cooked. The last hour Chris had a brilliant idea to add a cup of corn so we did. Then when it is all done I just shredded the chicken which is so easy to do. And we cooked up some of the tortillas you can get in the store that are not cooked yet. (by the cheese usually).
Then you top them with the chicken and it was SO good! We loved it. I think that will be a Cotton family favorite!
Now all I need is for my tomatoes to grow! I planted nine tomato plants! I sure hope they work. We planted them a little late and then the next two weeks it just rained! They need sun! So it should be interesting to watch what happens. I just planted them off the patio where the flowers are supposed to go because I am sad to say we don't have a garden. Next year it is my goal to have a garden! I would LOVE a garden because I love all the veggies you can grow. Growing up we always had one and I want my kids to have that memory as well. Besides the fact I think it would just be so much fun. And I would love to learn to bottle them as well, especially tomatoes.

Sorry he is such a handful at your house, you can come to ours sometime and he won't be as much of a pain.
You are such a beautiful girl and I was so worried I would be intimidated by you guys but we felt right at home. It felt nice to hear that you too felt home sick for your old life when you first had clara. It was the hardest time of my life but now I can't imagine life without being a mother. The love I have for Conner is unspeakable, you will be amazed to see that you will love her EVEN MORE than you do right now, i promise, as she grows. Its amazing. PS that chicken stuff sounds glorious I need it.
